4 TBSP. Margarine

1 small onion (diced)

1 large tomato (diced)

2 (5 oz.) cans tuna (in water, drained)

2 eggs

1 TBSP. Cilantro (chopped finely)

6-9 Corn tortillas (warmed)

2 lemons (quartered)

1 avocado (thinly sliced lengthwise) (optional)

Hot Sauce (optional)


  1. Heat medium sized pan on high.
  2. Melt margarine in pan, add onion and tomato. Saute till juices are rendered from tomato (about 3 minutes).
  3. Add tuna, saute about 2 minutes.
  4. Add eggs and cilantro continue to stir for about five minutes or until eggs are cooked, don't overcook or tuna will dry out.
  5.  Place tortillas on a plate, top with about 1 1/2 to 2 tablespoons of tuna, squeeze a bit of lemon from wedge, place an avocado slice(optional), and sprinkle some hot sauce(optional).
  6. Serve and enjoy.

All my friends and family love this recipe. I don't add spices to preserve the flavor of the tuna as well as the other ingredients. I usually serve this with a rice pilaf, spanish rice tends to be a little too stron and takes away from the flavor of the tacos.

I created this recipe when I was only 16 years old, I am now 40+ years and am a grandma, my family and friends love this recipe, even my three year old grandson. I have friends that don't particularly like tuna but really love this recipe. Hope you enjoy it. No spices are needed, I don't add any to preserve the flavor of the tuna as well as the other ingredients but you can add spices if you choose.
