Tuna-Bruschetta Pasta

Ingredients
- 1 package angel hair spaghetti or other type pasta
- 1-2 tbsp olive oil
- 1 small red onion, diced
- 1pint button mushrooms, sliced
- 2 garlic cloves, minced
- 1 tbsp red pepper flakes
- 1 jar artichoke-tomato pesto (substitute one can quartered artichoke hearts plus prepared basil pesto of needed)
- 1-2 fresh Roma tomato if desired
- 1 pouch (2.6 oz.) StarKist Tuna in Olive Oil
- Sprinkle of Shaved Romano/parmesan if desired
Directions
- Boil water and cook pasta according to Package. Strain and set aside.
- While cooking pasta: Heat olive oil in a sauce pan over medium heat. Add diced red onion. After semi- translucent, add mushrooms until all liquid has evaporated from mushrooms Add minced garlic, toast 1-2 minutes or until fragrant, stirring frequently
- Drain tuna, add to sauce pan. Stir for 1-2 minutes letting tuna absorb the flavors
- Add jar of artichoke- tomato/pesto Toss with pasta Serve with oven-fresh bread... Voila!
