Recipe
Ingredients
- 2 pouches (4.5 oz.) StarKist Tuna Creations®, Zesty Lemon Pepper
- 6 oz. Farfalle (bow tie)pasta
- 2 Tbsp. olive oil
- 1 bag (6 oz.) fresh baby spinach
- 1 large tomato, diced
- 1 cup crumbled feta cheese
- ¼ cup toasted pine nuts
- ¼ tsp. garlic powder
- Salt and pepper to taste
Directions
- Place pasta in boiling water and cook to al dente stage. (approximately 10 – 15 minutes)
- Drain pasta and place in large bowl and mix in oil. Add spinach to hot pasta and stir to slightly wilt spinach. Add tuna, tomatoes, feta cheese, pine nuts and garlic powder and stir well.
- Place in refrigerator to chill, at least 2 hours, up to 24 hours. Let stand on counter for 30 minutes before serving. Season with salt and pepper as desired.
