Food is a central part of most holidays and for many Italian Americans the Feast of the Seven Fishes on Christmas Eve is no exception.  No one really knows when this tradition started, but the fish dinner on Christmas Eve is celebrated in many Southern Italian families as well as many Italian American families.   The number of fish dishes vary according to family tradition and the region of the country they are from.  The reason for fish is that Christmas Eve used to be a day of fasting, just like Good Friday and no meat was eaten.  The reason for the seven fish dishes also varies according to the family.  Some say it is because of the seven sacraments, or the seven hills in Rome, the seven days of the week, or the seven days it took God to create the universe.

Recipe

Ingredients

  • 1 pouch (6.4 oz.) StarKist® Chunk Light Tuna in Water
  • 2 cups tri-color spiral pasta (uncooked)
  • 1 cup asparagus, cut in 2-inch pieces
  • 1 cup slivered pea pods
  • ½ small zucchini or yellow squash, diced
  • ½ small red onion, sliced
  • 1 can (6 oz.) sliced ripe olives, drained

Lemon Dijon Vinaigrette:

  • 1/4 cup Extra Virgin Olive Oil
  • Zest from 1 lemon
  • 2 Tbsp. lemon juice
  • 2 tsp. dijon mustard

Directions

  1. Cook pasta according to package directions.  During the last 3 minutes of cooking add asparagus pieces.  Drain pasta and asparagus and run under cold water to cool.
  2. In a large bowl combine tuna, pasta, asparagus, peapods, zucchini, red onion, and ripe olives.
  3. In a small bowl, whisk olive oil, lemon zest and mustard together.  Gradually whisk in lemon juice.
  4. Pour dressing over pasta mixture and combine well.  Chill until ready to serve.
